Food & Beverage Report - Western Canada

The 2005 Western Canada Tourism Industry Compensation Study is the result of an initiative conducted on behalf of go2 by the Hay Group, one of Canada’s most respected human resource management consultants.  The comprehensive report, which was made possible with the participation of 449 organizations located in the Yukon and the four western Canadian provinces, examines compensation made to thousands of individuals in the industry.  

The Food and Beverage Report reveals a number of important factors that human resource specialists and employers should take into consideration.  For example, according to the Study, restaurant employees are significantly higher paid in the accommodations sector than their counterparts in Food and Beverage.

Salaries and Employee benefits are also reviewed in this document.  Interestingly, more than half of the organizations surveyed offered benefit programs that included dental, extended health, long term disability and life insurance.  Futhermore, 72 per cent of operators surveyed in the Food & Beverage sector have a gratuity splitting policy in place. One third of those with a policy have a tip pool so that all staff share gratuities and another one third require servers to tip support and kitchen staff directly.

Staff recruitment and retention are also examined.  According to survey results, three quarters of respondents agreed that career advancement opportunities were effective in attracting and retaining staff. 93 per cent believe that delegating responsibility and authority contributes to employee morale and job satisfaction. Two thirds of the companies surveyed have some type of bonus program. Bonuses paid to managers averaged just less than 14 per cent of base salary, and just over three per cent for eligible full-time, front line staff.
